Slow Cooker Hunter's Chicken

We love chicken, BBQ sauce and cheese (who doesn't?!) AND we love any excuse to crack out the slow cooker. This easy-peasy Slow Cooker Hunter's Chicken recipe means you can come home to your favourite pub grub order, piping hot and ready to serve.

Ingredients

  • chicken breast — 4 breasts600 g
  • bacon medallions4 ea
  • reduced-fat cheddar — grated80 g
  • onion — diced0.5 ea
  • garlic cloves — crushed2 ea
  • canned chopped tomatoes400 g
  • tomato purée1 tbsp
  • lemon — juiced0.5 ea
  • BBQ seasoning1 tbsp
  • smoked paprika — ¼ tsp0.6 g
  • balsamic vinegar — 1 tbsp20 ml
  • Worcestershire sauce — 2 tbsp40 ml
  • white wine vinegar — 2 tbsp40 ml
  • hot sauce1 tbsp
  • mustard powder1 tsp
  • granulated sweetener1 tsp

Method

  1. Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick.
  2. Set the chicken aside, then add all of the remaining ingredients into the slow cooker and stir well.
  3. Place the chicken on top and replace the lid. Cook on high for 2½-3 hours (or low if you're leaving it on all day).
  4. When the time is up, check that the chicken is cooked. Remove it from the slow cooker and set aside.
  5. Blitz the sauce with a stick blender until smooth.
  6. Place the cooked chicken in an ovenproof dish and remove the cocktail sticks.
  7. Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all four chicken breasts.
  8. Place under a hot grill until the cheese is melted and a nice golden colour.

    Dairy-free cheese melts more slowly, so give it an extra minute or two under the grill and watch that it does not scorch.
