
Slow Cooker Chicken Thighs

Juicy, fall-apart chicken thighs with a garlic and paprika rub, browned then slow cooked in a garlic butter stock.

Ingredients
- boneless skinless chicken thighs680 g
- paprika5 ml
- garlic granules5 ml
- Italian seasoning5 ml
- olive oil15 ml
- chicken stock100 ml
- butter30 g
- garlic cloves — crushed2 ea
Method
- Mix the paprika, garlic granules and Italian seasoning in a small bowl.
- Coat the chicken thighs all over in the spice mix.
- Heat the olive oil in a large pan over a medium heat and fry the chicken thighs for 4 minutes until browned.
- Move the browned chicken to the slow cooker.
- Add the crushed garlic, chicken stock and butter to the slow cooker.
- Cook on high for 2.5 hours or on low for 3-4 hours.
- Serve, sprinkled with chopped fresh basil if you like.
