A vegetable egg bake for meal prep: eggs, cheddar and veg baked on a sheet pan and sliced into portions.

Ingredients
- eggs10 ea
- milk60 ml
- cheddar cheese — grated60 g
- spinach — chopped60 g
- red pepper — diced1 ea
- cherry tomatoes — 10; sliced150 g
- spring onions — 4; sliced60 g
- broccoli — 1/2 head; cut into small florets175 g
Method
- Preheat the oven to 200°C (180°C fan) / Gas 6 and lightly oil a large sheet pan.
- Crack the eggs into a large bowl, add the milk and a pinch of salt and pepper and whisk together.
- Add the cheese, spinach, red pepper, tomatoes, spring onions and broccoli and mix well.
- Pour the mixture into the sheet pan.
- Bake for 20-25 minutes, until the eggs are cooked and firm.
- Leave to cool for a few minutes, then cut into slices.

- 60 ml Oat milk instead of milk
- 60 g Dairy-free cheddar instead of cheddar cheese
