Ridiculously Good Air Fryer Chicken Breast

My go-to everyday air fryer chicken breast! Thinly sliced chicken breast pieces, coated to the max in spices, plus a bit of brown sugar and cornstarch, and air fried to golden, juicy perfection.

Ingredients

  • paprika — 1 tsp2.5 g
  • smoked paprika — ¼ tsp0.6 g
  • garlic powder0.5 tsp
  • onion powder0.5 tsp
  • fine table salt — ¾ tsp4.5 g
  • brown sugar — 1 ½ tsp6 g
  • cornstarch — 1 tsp2.6 g
  • avocado oil — 2 tsp10 ml
  • boneless skinless chicken breasts450 g

Method

  1. Cut each chicken breast into thin, flat pieces (not bite-sized, but something that looks like a thin chicken breast) - often 3-4 thin pieces per breast. Thin chicken is essential! Pat the chicken dry if it has a lot of moisture on it.
  2. Toss the spices, brown sugar and cornstarch together so they're mixed well; sprinkle the mixture over the chicken pieces in a bowl. Add the oil and toss to thoroughly coat the chicken. You can give it a short rest, but the flavour is excellent even if it goes straight into the air fryer.
  3. Preheat the air fryer. Place the chicken on the basket in an even layer, leaving a bit of space for air to circulate. Air fry at 415°F (210°C) for 10 minutes; larger pieces need closer to 13 minutes. You're looking for an internal temperature of 165°F (74°C).
  4. Let it rest for a moment, then slice and enjoy - crisp on the outside, full of flavour and juicy. Great dunked in a gochujang dipping sauce.

    • 300 g Salmon fillets instead of boneless skinless chicken breasts

    Leave the salmon fillets whole rather than slicing them, coat in the rub and air fry at 200°C for 7 to 9 minutes until just flaking; watch the sugar does not scorch.
