Pumpkin Spice Latte Waffles

Ingredients

  • porridge oats80 g
  • pumpkin purée100 g
  • espresso30 ml
  • ground cinnamon — ½ tsp1.3 g
  • mixed spice — ¼ tsp0.6 g
  • granulated sweetener2 tbsp
  • eggs2 ea
  • fat-free natural yoghurt350 g

Method

  1. Blitz the oats in a food processor until they're a smooth fine powder consistency.
  2. Add the blitzed oats, pumpkin purée, coffee, cinnamon, mixed spice, sweetener, eggs, and yoghurt to a bowl. Mix well, until smooth.
  3. Plug in your waffle maker and once hot, spray it with a little low-calorie cooking spray.
  4. Pour half of the waffle batter onto the hot plate and spread out. It depends on the size of your waffle maker — for reference, we made 2 large circle waffles with 4 waffle sections in each circle.
  5. Seal your waffle maker and cook for 5-6 minutes, or until the waffle is crispy and golden brown around the edges. Repeat with the remaining mixture.
  6. Your waffles can be served alone or with a dollop of yoghurt, fruit, and a drizzle of honey.
