
Nori Sesame Prawn Pasta

Angel hair pasta tossed with a blitzed nori and sesame base, soy, sesame oil and an egg yolk that melts into a glossy sauce, topped with prawns seared in crispy chilli oil.
Ingredients
- roasted seaweed snacks15 g
- roasted sesame seeds — 1 tbsp11 g
- angel hair pasta180 g
- soy sauce — 125 ml for the pasta cooking water145 ml
- sesame oil — 2 tbsp40 ml
- garlic cloves — finely chopped2 ea
- sugar — ½ tsp2.1 g
- egg — yolk only1 ea
- crispy chilli oil — 2 tbsp40 ml
- peeled raw prawns — deveined250 g
- parmesan cheese — grated to serve20 g
- chives — chopped to serve1 bunch
Method
- Make the nori sesame base: blitz the roasted seaweed and sesame seeds in a blender until finely ground. Transfer to a large heatproof bowl. Add 1 tbsp soy sauce, the sesame oil, garlic, sugar and egg yolk and stir until combined. Set aside.
- Bring a large pot of water to the boil. Add ½ cup soy sauce, then the angel hair pasta. Cook according to the packet instructions until al dente. Reserve about 1 cup of the hot pasta cooking water before draining.
- Heat a non-stick frying pan over medium-high heat. Add the crispy chilli oil, then the prawns and a pinch of sea salt. Cook for 1-2 minutes each side until golden and cooked through. Remove from the heat.
- Add the hot drained pasta straight into the bowl with the nori sesame mixture. Toss immediately with tongs or chopsticks so the heat melts the egg yolk into a glossy sauce, adding the reserved pasta water a little at a time to loosen and coat evenly.
- Divide the pasta among bowls. Top with the prawns and any chilli oil from the pan, then finish with freshly grated parmesan and chives. Serve immediately.

Vegetarian
Nori Sesame Tofu Pasta
- 220 g Firm tofu instead of peeled raw prawns
Press and cube the tofu, then sear it in the chilli oil for 6–8 minutes until golden on all sides before cooking the pasta.
Vegan
Nori Sesame Tofu Pasta
- 20 g Tahini instead of egg
- 220 g Firm tofu instead of peeled raw prawns
- Leave out the parmesan cheese
Stir the tahini into the nori base instead of the yolk and toss with pasta water until glossy; press, cube and sear the tofu in the chilli oil for 6–8 minutes, and finish with chives instead of Parmesan.
Gluten-free
- 180 g Gluten-free angel hair pasta instead of angel hair pasta
- 145 ml Tamari instead of soy sauce
Gluten-free angel hair overcooks quickly, so check it a minute early and toss it straight into the sauce.
Dairy-free
- Leave out the parmesan cheese
Finish with extra sesame seeds and chives instead of the Parmesan.
