Marry Me Chicken High Protein Smash

A rich, creamy sun-dried tomato chicken spread that's gently spicy, garlicky and seriously moreish. Pile it onto toast for the ultimate indulgent snack or light lunch.

Ingredients

  • chicken breast640 g
  • chilli flakes3 g
  • cherry tomatoes250 g
  • garlic cloves2 ea
  • sun-dried tomatoes — drained180 g
  • light cream cheese40 g
  • fresh basil15 g
  • parmesan60 g
  • low-calorie cooking oil spray1 ea
  • sourdough bread4 slice

Method

  1. Heat the oven to 200°C. Lay out the chicken breasts on a large baking tray, spray with olive oil, sprinkle over the chilli flakes and season with salt and black pepper. Mix everything together so the chicken is fully coated. Slide into the oven and bake for 20 mins, until cooked through. Leave to rest for 5 mins.
  2. While the chicken bakes, finely chop the garlic, then drain and roughly chop the sun-dried tomatoes. Heat a large non-stick frying pan over a medium heat with a little olive oil. Add the cherry tomatoes and fry for a couple of minutes, then squash them with the back of a spoon. Keep cooking for another 3 mins, until most of the water has evaporated.
  3. Add the garlic and cook for 30 seconds until fragrant, then stir through the sun-dried tomatoes and cook for a further 3-5 mins.
  4. Tip the tomato mixture into a large bowl. Add the cream cheese and chicken to the bowl, then pick and tear in the basil leaves and grate in the Parmesan. Mash everything together with a pizza cutter until evenly chopped and well combined.
  5. Toast the bread and top generously with the chicken smash. We use ice cream scoops for portioning, but feel free to dollop it on as you wish. Finish with the remaining basil and an extra grating of Parmesan.

    • 40 g Dairy-free cream cheese instead of light cream cheese
    • 20 g Nutritional yeast instead of parmesan

    Skip baking the chicken: warm the drained chickpeas with the chilli flakes in the pan for 5 minutes, then mash with the tomato mixture.

  • Gluten-free

    • 160 g Gluten-free bread instead of sourdough bread

    Gluten-free bread toasts faster, so watch it closely.

  • Dairy-free

    • 40 g Dairy-free cream cheese instead of light cream cheese
    • 20 g Nutritional yeast instead of parmesan

    Nothing changes in the cooking; sprinkle a little extra nutritional yeast over the top instead of parmesan.
