Hot Chocolate Banana Muffins

Such an easy way to use up that hot chocolate mix instead of letting it sit in the cupboard.

Ingredients

  • ripe bananas3 ea
  • eggs2 ea
  • melted butter100 g
  • milk — ½ cup125 ml
  • hot chocolate mix1 cup
  • plain flour — 1 ½ cup225 g
  • baking powder — 2 tsp9 g
  • salt — ¼ tsp1.5 g

Method

  1. Preheat oven to 180°C fan-forced and line a muffin tin.
  2. Mash the bananas, then whisk in the eggs, melted butter and milk.
  3. Stir through the hot chocolate mix.
  4. Add the flour, baking powder and salt, and gently mix until just combined.
  5. Divide between 10–12 muffin cases, filling about ¾ full.
  6. Bake for 18–22 minutes, or until a skewer comes out clean or with a few moist crumbs.
  7. Let them cool slightly before enjoying.
