Healthier Chocolate Teddy Biscuits

Homemade chocolate teddy biscuits sweetened with maple syrup. Cutting the shapes is a great job for little hands.

Ingredients

  • plain flour — 2 cup; or spelt or buckwheat300 g
  • cacao powder — ½ cup50 g
  • bicarbonate of soda — ½ tsp2.3 g
  • sea salt — a pinch0.4 g
  • vanilla extract — 2 tsp10 ml
  • coconut oil — ½ cup; melted125 ml
  • milk — 4 tbsp; approximately80 ml
  • maple syrup — ¼ cup65 ml

Method

  1. Preheat the oven to 160°C fan-forced.
  2. In a mixing bowl, combine the flour, cacao powder, bicarbonate of soda and salt.
  3. Mix in the vanilla, coconut oil, milk and maple syrup until well combined — add milk a little at a time until the dough feels like playdough. (Like it sweeter? Add more syrup and less milk.)
  4. Roll the dough into a ball, wrap it and refrigerate for 30–60 minutes (you can skip this if you're in a rush).
  5. Roll out to 2–3 mm thick and cut shapes with a cookie cutter, or roll into little balls and press flat.
  6. Place on a lined or greased baking tray and bake for 10 minutes.
  7. Leave on the tray until completely cooled. Store in an airtight container in the fridge or freezer; packed from frozen they defrost by recess.
