Ground Beef and Eggs

A quick one-skillet breakfast of lean ground beef cooked with Mediterranean spices and softly folded eggs.

Ingredients

  • olive oil30 ml
  • garlic clove — minced1 ea
  • lean ground beef115 g
  • Lebanese seven spice1 tsp
  • ground cinnamon — ½ tsp1.3 g
  • paprika — ½ tsp1.3 g
  • salt — ½ tsp3 g
  • black pepper0.5 tsp
  • large eggs8 ea
  • fresh parsley — chopped, for serving4 g

Method

  1. Heat the olive oil in a large non-stick skillet over medium-high heat. Add the garlic and cook for 1 minute until fragrant.
  2. Add the ground beef, seven spice, cinnamon, paprika, salt and black pepper and cook until browned, about 3 minutes.
  3. Crack the eggs on top of the beef and lower the heat to medium. Use a spatula to lightly fold the eggs until almost cooked through, with a little liquid egg remaining, about 5 minutes. Don't over-mix, so the beef and eggs stay somewhat separate.
  4. Carefully transfer to a wide round dish, sprinkle the parsley on top and serve with Lebanese pita bread.
