
Garlic Dijon Chicken

Five minutes of prep and one pan: chicken thighs coated in a tangy mustard-honey sauce with garlic, coriander and a little cayenne, baked with onion.
Ingredients
- boneless skinless chicken thighs680 g
- yellow onion — roughly chopped1 ea
- fresh parsley — chopped15 g
- dijon mustard15 g
- honey — 2 tsp14 g
- extra virgin olive oil80 ml
- garlic cloves — minced6 ea
- ground coriander — 1 tsp2.5 g
- paprika — ¾ tsp1.9 g
- black pepper0.5 tsp
- cayenne pepper — optional0.5 tsp
Method
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry and season both sides with salt and pepper. Set aside while you make the sauce.
- In a large bowl, combine the Dijon mustard, honey, olive oil, garlic, spices and a pinch of salt. Mix.
- Add a few pieces of chicken at a time to the sauce and use tongs to coat each one. Transfer to a large lightly oiled cast-iron skillet or baking sheet, scrape any remaining sauce on top and add the onion.
- Bake until the chicken is cooked through (165°F / 74°C inside), about 25 to 30 minutes.
- Garnish with fresh parsley and serve.

Garlic Dijon Salmon
- 600 g Salmon fillets instead of boneless skinless chicken thighs
Give the onion 10 minutes in the oven first, then add the coated salmon and bake for 12 to 15 minutes until it just flakes.
Vegetarian

- 450 g Firm tofu instead of boneless skinless chicken thighs
Press the tofu, cut it into thick slabs or cubes and coat in the sauce; bake for 20 to 25 minutes, turning halfway, until golden at the edges.
Vegan

- 450 g Firm tofu instead of boneless skinless chicken thighs
- 15 ml Maple syrup instead of honey
Press the tofu, cut it into thick slabs or cubes and coat in the sauce; bake for 20 to 25 minutes, turning halfway, until golden at the edges.
