
Fluffy Choc Banana Protein Cake

Lighter than banana bread and less sugary than an ordinary cake. Eat a slice warm, then freeze the rest in single slices for lunchboxes.

Ingredients
- ripe bananas3 ea
- eggs2 ea
- self-raising flour — 1 ¼ cup190 g
- chocolate protein powder — 1 scoop30 g
- cacao powder — 2 tbsp16 g
- baking powder — ½ tsp2.3 g
- salt — ½ tsp3 g
- milk — 2 tbsp; only if the batter is dry40 ml
- dark chocolate chips — to sprinkle60 g
Method
- Heat the oven to 170°C and line a square baking tin.
- Mash the bananas in a large bowl.
- Push the banana to one side and whisk the eggs very well — this is what makes the cake light and fluffy.
- Add the self-raising flour, protein powder, cacao, baking powder and salt.
- Gently fold everything together without overmixing (overmixing turns a fluffy cake into a dense slice). Add a splash of milk if it looks too dry — riper, bigger bananas need less.
- Spread into the tin and sprinkle with dark chocolate chips.
- Bake for 30 minutes.
- Have a slice while it's warm, then cool fully, slice and freeze in individual slices for lunchboxes.

- 190 g Gluten-free self-raising flour instead of self-raising flour
Gluten-free flour soaks up more liquid, so you will likely need the splash of milk; bake for the same 30 minutes and check with a skewer.

- 40 ml Oat milk instead of milk
- 60 g Dairy-free dark chocolate chips instead of dark chocolate chips
