
Cuban-Style Beef

Cuban-Style Beef is a hearty, slimming-friendly meal, great if you're counting calories.
Ingredients
- stewing steak500 g
- beef stock cubes — made up with 240 ml boiling water2 ea
- canned chopped tomatoes400 g
- onions — sliced2 ea
- green peppers — deseeded and sliced into strips2 ea
- red peppers — deseeded and sliced into strips2 ea
- garlic cloves — crushed4 ea
- tomato purée2 tbsp
- ground cumin — 1 tsp2.5 g
- dried oregano — 1 tsp1 g
- ground turmeric — ½ tsp1.3 g
- bay leaves2 ea
- fresh coriander — 1 tbsp; chopped7.5 g
- red wine stock pot1 ea
- white wine vinegar — 1 tbsp15 ml
Method
- Season the meat well with salt and pepper, then spray a frying pan with low-calorie cooking spray.
- Heat the pan and brown the meat on both sides.
- Add all the remaining ingredients to the slow cooker along with the browned meat.
- Set the slow cooker to high and cook for 6 hours (or medium for 8 hours).
- Shred the meat with 2 forks (when cooked the meat should shred easily).
- If the sauce is still a little thin, remove the lid and allow to reduce slightly.
- Serve on a bed of rice, or with whatever you fancy.

Cuban-Style Jackfruit
- 560 g young jackfruit instead of stewing steak
- 2 ea vegetable stock cube instead of beef stock cubes
- 1 ea vegetable stock pot instead of red wine stock pot
Skip browning the meat; drain and rinse the jackfruit and slow-cook it on high for about 3 hours, then pull it apart with two forks and reduce the sauce if needed.
Vegan
