Cinnamon Sugar Apple Cake

This simple cinnamon sugar apple cake is light and fluffy, loaded with fresh apples, and topped with a crunchy cinnamon sugar layer!

Ingredients

  • brown sugar330 g
  • vegetable oil80 ml
  • egg1 ea
  • buttermilk240 ml
  • vanilla extract — 1 tsp5 ml
  • baking soda — 1 tsp4.5 g
  • plain flour315 g
  • large apples — chopped; about 300 g; Honeycrisp works best2 ea
  • white sugar100 g
  • ground cinnamon — 1 tsp2.5 g
  • butter — melted, plus extra for the pan14 g

Method

  1. Preheat the oven to 325°F (165°C). Mix or whisk the brown sugar, oil, egg, buttermilk, vanilla, baking soda and flour in that order, stirring until just combined. Fold in the apples.
  2. Pour the batter into a buttered 23 x 33 cm (9 x 13 inch) pan, or line it with parchment paper.
  3. Combine the sugar, cinnamon and melted butter with a fork until evenly dispersed, pressing out any clumps; it will have the texture of damp sand. Sprinkle and crumble it evenly over the cake.
  4. Bake for 45 minutes, testing with a toothpick if needed. Serve with honey butter or whipped cream if you like.
