Apple Cinnamon Oatmeal Cups

A cross between baked oatmeal and muffins, made with simple vegan ingredients for an easy grab-and-go breakfast.

Ingredients

  • rolled oats270 g
  • ground cinnamon — 2 tsp5 g
  • baking powder — 1 tsp4.5 g
  • salt — ¼ tsp1.5 g
  • almond milk360 ml
  • unsweetened applesauce250 g
  • maple syrup60 ml
  • apple — finely chopped125 g
  • pecans — chopped, optional55 g

Method

  1. Preheat the oven to 350°F (180°C). Spray a 12-cup muffin pan with nonstick spray.
  2. In a large bowl, whisk together the oats, cinnamon, baking powder and salt. Add the milk, applesauce and maple syrup and stir until well combined.
  3. Fold in the chopped apple and pecans. Transfer the oatmeal mixture into the prepared muffin cups, filling them all the way to the top. The batter will seem a little wet, which is normal.
  4. Bake for 30–35 minutes, until the edges are lightly browned and the tops are set.
  5. Allow to cool completely in the muffin tin before serving.
